2014 RCA Professional Culinology® Competition
For the 2014 RCA Professional Culinology® Competition, an ACF sanctioned culinary competition (application pending), up to 24 professional teams consisting of one (1) RCA member and one (1) ACF member will compete for a $5,000 first place award by developing a written proposal for a Pacific Northwest regional, food truck cuisine, complete meal concept featuring seafood with a healthy dessert featuring fruit for school food service (grades 9-12), addressing sodium concerns which includes both gold standard recipes and the corresponding product formulations. The concept must be based on Pacific Northwest regional cuisine and feature seafood, a fruit and a sodium reduction technology from ingredient partner companies. On the day of the competition, March 13, 2014, finalists created the fresh product version of their school food service concept, and were judged in part against how well the commercialized components match up against the gold standard.
As an ACF sanctioned culinary competition, finalists compete not only for a $5,000 first place award, but also for ACF competition medals.
