Commodity vs Specialty Cheese

Why are so many chain restaurants using the same 4 cheeses when there are hundreds of cheeses to choose from? Consumer appetite and approval is there for specialty cheeses!

We will review the top cheese trends and the top ten cheeses that are used on today's menus and in consumer prepared foods. During the session we will taste three specialty cheeses that are on trend for 2016.

Then we will anonymously review some of the major chain restaurants menus that showcase cheese to demonstrate the limited variety of cheeses used across menus compared to the retail sector—where hundreds of varieties of cheese are for sale. We will also review the sales of some of the more interesting varieties and prove that consumers are ready to accept specialty cheese.
