Job Description: Looking for an experienced chef to create new sauces, soups, salsas and salad dressings with scale up and manufacturing experience. Professional experience in a commercial kitchen involving:

  • Recipe Development - Preparation, organization and finished ingredient percentages and procedures necessary to recreate the recipe. Chef should be able to develop great tasting prototypes from a recipe as well as reverse engineer products from an ingredient deck that does not have the instructions on how to prepare the finished product.
  • Ingredient Knowledge - Breadth of ingredient experience with FDA products… knowledge of emulsifiers as well as experience with stabilizers, gums, colorants and emulsifiers involving sauces, soups, salsas and dressings is required. Gluten Free, Natural, and Organic is a plus.
  • Experienced Palate - Accurate palate that can discern what is missing in a recipe that the chef created compared to a control.
  • Commercialization - Provide upscale instructions to create a manufacturing batch with minimal quality and yield loss.

Responsibilities: Creating Recipes 

  • Develop, test, and finalize new kitchen “gold standard” recipes for scale-up.
  • Writing and testing detailed recipes with yields.
  • Create prep lists for ordering kitchen ingredients.
  • Measure and document quality parameters such as pH, salinity, Bostwick, Brix, etc. for gold standard samples and document all quality and sensory data.
  • Meticulously record all work performed when creating recipes and produce final procedures for each recipe created, culminating in ingredient and finished product specifications.

R&D Functions:

  • Sense of urgency required to write reports, manage recipe versions, and communicate timely to move client projects forward without delay.
  • Maintain all R&D responsibilities including inner-working of a kitchen; prep lists, ordering and maintaining ingredients and cooking stations.
  • Organize and document storage of all finished samples and kitchen ingredients.
  • Plan and scheduling the R&D kitchen to develop prototypes.
  • Replicate production process in R&D while creating recipe prototypes; allowing manufacturing to perform similar processes while creating a commercial batch. 
  • Support scale-up of final kitchen recipe into commercial manufacturing process, including ingredients and procedures resulting in minimal product quality and yield degradations.
  • Test, improve and scale existing Company recipes where required.

Qualifications:

  • Culinary Degree with food science knowledge. 
  • Culinary Art Certification and chef training desirable.
  • Computer savvy; able to use Excel, Word and Google Docs.
  • Team player who is self-motivated with consistent focus and enthusiasm.
  • At least 5 years of experience as an R&D chef and a lead recipe developer/tester.
  • At least 2 years of managing a test kitchen and recipe development preferred.

Education: Culinary Degree with food science knowledge. 

  • Culinary Art Certification and chef training desirable.
  • Computer savvy; able to use Excel, Word and Google Docs.
  • Team player who is self-motivated with consistent focus and enthusiasm.
  • At least 5 years of experience as an R&D chef and a lead recipe developer/tester.
  • At least 2 years of managing a test kitchen and recipe development preferred.

Preferred Designations: CCS - Certified Culinary Scientist

Compensation: $75,000.00 – $100,000.00 per year
