New England Region: Delicious and Nutritious

What does a retired chef, culinologist and RCA member do with his free time?  Ask Jerry Levine, former research chef for Legal Seafoods in Boston. Having studied marine biology in college, today Jerry volunteers on the Board of Health in Plymouth, Massachusetts, and is leading local environmental concerns for the Herring Ponds Watershed Association. In addition, he has followed his passion to co-host a local community TV show on PACT TV called “Delicious and Nutritious.” Jerry has teamed up with nutritionist Marcia Richards. 

Jerry and Marcia will demonstrate two dishes, and throughout the demonstration, Jerry will discuss the ingredients and cooking techniques while Marcia will provide a nutritional profile for each recipe. Marcia will compare the nutritional profiles of these recipes to similar frozen meals, to show how cooking from scratch can moderate fat, sodium and calories.  Recipes will be provided in advance of the demonstration.

Marcia Richards MEd RD MCHES is a community RD with Beth Israel Deaconess Hospital - Plymouth. In addition to authoring Simple and Delicious Vegetable Recipes and co-hosting Delicious and Nutritious, she has implemented the Healthy Market program in Plymouth’s smaller grocery stores. Her goal is to make the healthy choice the easy choice throughout Plymouth. As a Registered Dietitian, this allows her to provide people across all demographics with current, evidence-based information about nutrition and its impact on health.

Jerry and Marcia’s recipes have garnered a captive audience across 40 CATV outlets around the country as far away as Wisconsin and Texas. So, what is the secret to their shows? Cooking themes are simple and effortless but address many health issues of their older viewers. According to Marcia, “recipes promote the prevention and management of chronic illnesses including heart disease, diabetes and obesity.” The show’s goal is to teach people how to prepare healthy meals that are not only nutritious but delicious. “What our show is really about is preparing food that looks good, smells good, tastes good and importantly is nutritionally sound,” says Jerry.

PAC TV will be filming the 30-minute demonstration that will later be shown to their audiences.  After the demonstration, we will then open it up for discussion, questions and answers with them from our RCA audience.
