Save the date for the Southern California Region's annual education and networking event. This year's focus will be Plant-Based Foods: from Tofu and Seitan to Impossible and Beyond… with Dr. Samir Amin

Presentation Information: Over the past decades, there has been a shift from an animal-centric to a more plant-centric diet in western society. This shift is driven by consumers changing attitudes towards healthy eating, environmentally friendly, and sustainability. Scientists have developed a plethora of products to satisfy consumers' demands for animal-based alternatives to such items as meat, cheese, and milk. The development of these products brings new challenges for scientists to overcome. We will discuss some current processes for the production of plant-based meats, cheeses, and dairy products, sustainability concerns, and sensory challenges.
