Event Summary:
Join RCA Chicagoland and ACF Chicago Chefs for a joint event on April 8th from 5-8pm at Charlie Baggs featuring an open bar, appetizers, and professional networking , as we take a deep dive into all things Copi.  Learn how this invasive fish is sourced, processed and utilized in foodservice.  A sampling of Copi dishes will be presented along with inspiration on how to develop Copi dishes for foodservice and retail.

Sunny Khamkar - Cofounder, CEO of MenuData, which identifies real-time global menu innovations across trending flavors, ingredients, and menu items, utilizing social listening and generative AI to provide sales and marketing insights to the food and beverage industry. 

Will Iyawe-Parsons - Will Iyawe-Pasons helps lead business development for the Choose Copi® invasive carp into foodservice. He is the founder of Taste of New Foods and the inventor of Tigernut Milk Powder, which is quickly becoming the new standard ingredient for the dairy-free category.
