Event Summary

Join Chef Jules Carney of The Leaping Pig Charcuterie for a high-energy, 3-hour sausage-making session focused entirely on building the perfect links for the grill. This class moves beyond basic grinding to focus on emulsion stability, fat retention, and flavor development—the keys to a truly juicy, grill-ready sausage. You will master two distinctly different, yet universally loved, grill staples: a classic pork and a robust beef sausage.

 

What You Will Master:

  1. The Perfect Pork Link (Bratwurst): Learn the technique of the coarse grind and the crucial steps for creating a stable, juicy emulsion that resists drying out on high heat.
  2. The Robust Beef Link (Chorizo): Master working with beef and beef fat, achieving a medium grind, and building intense flavor to create a rich, grill-ready Chorizo.
  3. Grill-Ready Finishing: We will cover the final steps necessary for grilling links, including casing techniques, safe cooking temperatures, and methods to prevent bursting.
  4. The Grand Finale: The class will conclude with the best part—a live cooking demonstration and tasting of the sausages we created! You will leave with two unique varieties of fresh sausage, detailed recipes, and the confidence to master the grill season.

 

We want your time in the kitchen to be safe, comfortable, and fun! Before you arrive, here are a few simple things to keep in mind:

  • Shoes: Closed-toe shoes with good grip — think sneakers or similar styles
  • Clothing: Comfortable, fitted clothing with full coverage; avoid loose sleeves
  • Jewelry & Hair: Skip the dangling jewelry, and tie back long hair
