Guided Tasting Recipes Included in Kit:

Mocktail Mixing – Utilizing Sapphire Flavors, caramelized sugar will be added for complimenting flavor extensions, natural color and for an overall rounding out finishing touch on a simple yet delicious mocktail anyone can make.

Chef Jud’s High Plains BBQ Sauce – This is a BBQ formulation Chef Jud created from scratch and the x-factor ingredient he uses is the caramelized sugar. A simple caramelized sugar top-noting exercise to really showcase the strength of utilizing caramelized sugar in sauce developments for both natural flavor and color.

Chicken Gravy – A quick little blending of a chicken dry gravy mix, caramelized sugar powder and water transforms a simple chicken gravy into something someone’s grandmother could have created.

Speakers:
Thomas Barone is the Director of Southeast U.S. Sales and Marketing with Enterprise Food Products, llc. Thomas partners with both culinary and food science professionals alike to share with them the many natural benefits to using caramelized sugar ingredients in any type of food or beverage system for both natural flavor and color enhancements. Tom is a member of several industry associations, including IFT and the RCA.
Judson C. McLester is a graduate of the Culinary Institute of America (CIA) and has more than 30 years of experience as a Corporate Executive Chef. His long list of experiences includes culinary innovations spanning product development, food science, flavor systems, ingredient functionality and foodservice operations for many of the industry’s top food and beverage manufacturers.
As the founder and Corporate Executive Chef of J. McLester Consulting, Chef Jud advises manufacturers, suppliers, and foodservice operators on formulation, regulatory-driven reformulation, flavor optimization, and culinary training.
Chef Michael Morrison has been a culinary professional for more than 40 years. As a proud graduate from Johnson & Wales University (JWU), he has a wide array of rich experiences, ranging from becoming restaurateur, then in industrial R&D, Food Manufacturing, QSR and then fast forwarding to today, flavor developments and food ingredient sales. Chef Michael has always had a passion for the culinary arts and food science with tremendous insights to offer to the up-and-coming culinary talent of tomorrow.
