Event Summary: Stop buying generic hot sauce and start creating your own signature flavors. Join Chef Jules Carney of The Leaping Pig Charcuterie for a hands-on culinary workshop that will teach you the essential techniques for making vibrant, balanced hot sauces from scratch. Designed for both beginners and experienced home cooks, this immersive class explores three versatile methods you can use with a variety of peppers and ingredients: Fast-and-Fresh Bright Sauces – Learn the cook-and-blend technique while mastering the balance of heat, acidity, and fresh flavor. Introduction to Fermentation – Discover the basics of lacto-fermentation and how it creates complex, savory, and flavorful hot sauces. Smoky Charred Sauces – Explore roasting and charring techniques that enhance natural sweetness and add rich, smoky depth. By the end of the class, you will have the confidence and foundational knowledge to create countless hot sauce variations at home. Participants will take home samples of each sauce, complete recipes, and detailed technique handouts for continued experimentation. Whether you enjoy mild heat or bold spice, this class will help you transform simple ingredients into unique, handcrafted condiments.
Speakers: Jules Carney owns and operates an Arkansas-based company focused on producing locally sourced artisanal charcuterie and charcuterie-related products and services. His company, The Leaping Pig Charcuterie, prides itself on bringing only the highest quality products and services to his customers who range from farmers, culinary schools, event coordinators, food producers, food preservers and professional chefs. His motto, “Eat well! Live well!”, is at the core of how and why he shares his passion and fourteen years of experience and knowledge of the ancient art of charcuterie. Jules uses the hashtag #chARcuterie when he posts pictures or shares stories about his products online because he is proud to produce artisanal charcuterie in Arkansas, which is sourced from animals raised by farmers in Arkansas. In his opinion, Arkansas farmers raise some of the highest quality animals on some of the finest grazing lands in the country. Quality charcuterie starts with the quality of the meat. Fortunately, this high-quality, locally sourced meat allows him to proudly support local farmers and producers without reserve.
