Description: The way we experience food is enhanced when we consider the sensory interactions beyond taste. Flavor can be enhanced or muted depending upon a condiment, a beverage, or even the place food is enjoyed. The same is true for sound and rhythm. During this webinar attendees will participate in a cheese and music pairing experience.

Join Katie and Robert from Chr. Hansen (A Global Fermented Food Starter and Ripening Culture producing company) as they present iconic cheese styles, their folklore and history, and the science of what makes their flavor and texture come to life paired with songs selected by members of the RCA. On top of this, you will also get to try out CHR Hansen’s sensory analysis tool using your smartphone phone or computer and see group results in real time. Registration will close on November 10 to allow time for grocery lists and music pairings to be sent to attendees.

Robert Aguilera
North American Super User at Chr. Hansen’s TasteIT Sensory Software
Since 2020, CHR Hansen Food Cultures & Enzyme Account Manager primarily working with Fresh Dairy and Cheese producers, but has supported Plant Based and Fermented Meat customers as well. Currently living in the Boston Massachusetts area with his wife Margaret and 10year old twins, Owen and Audrey. He has been in Cheese since 2001. First in retail, then sourcing and importing cheese and artisan food products from Europe, then in cheese production trade sales & support for 9.5 years serving artisan and industrial cheese makers in cultures, equipment, aging room shelving and tools, packaging for better shelf life and troubleshooting services. An educator by heart, Robert created a Cheese and Culinary tasting experience club in Boston that ran for 4 years called the Bueno Queso Social Club. He is a charter member of the MA Cheese Guild, and has been a member of the American Cheese Society educational committee for 3 years developing educational content for the annual conference.
Katie Smoot
Account Manager at Chr. Hansen
Katie is an Account Manager in the Food Cultures and Enzymes division of Chr. Hansen primarily supporting fresh dairy and cheese producers throughout the greater Pacific Northwest region. She has a B.Sc. in Food Science and a post graduate degree focused primarily in Dairy Products Manufacturing and Technology. Katie got her start in cheese as a student cheesemaker at the Washington State University Creamery, making Cougar Gold® cheese and ice cream. She is currently based in Seattle, WA but has worked in various dairy manufacturing roles in R&D, operations and business ops in medium to large dairy manufacturing companies throughout the West and Midwest in her time before coming to Chr. Hansen. In her free time she likes to go hiking, rock climbing, seek out new restaurants and food experiences, travel, and make her own sauerkraut.
