We are kicking-off the 2017 Annual Conference on Tuesday, March 14, with an afternoon of exciting pre-conference workshops and excursions.   

Food Science for CRC Prep

If you are planning to take the RCA CRC exam and are a little unsure of your food science knowledge, this is the course for you! We cover the major food science topics, including basic chemistry, carbohydrates, fats and lipids, proteins, and will also conduct several basic meat processing demonstrations. Taught by two industry veterans with more than 60 years of food manufacturing and college level teaching experience between them, our objective is to take the “fear factor” out of learning food science.

Dr. James W. Lamkey has a PhD from the University of Nebraska-Lincoln in Animal Science and Food Science with an emphasis on protein processing.  Jim spent 7 years in research and teaching for both the University of Florida and Oklahoma State University, and 13 years with FMC Corporation assisting meat manufacturers around the world with processing challenges. He wrote the Protein and Red Meat chapter in the RCA’s Culinology® book.

Jeffrey Cousminer, a founder and former President of the RCA, has an MS in Food Science from Rutgers University and a culinary degree from the CIA. In 2001, he launched the Food Science for Chefs program and taught the food science component for many years. He also taught food science at Montclair State University. He is the Editor of the RCA’s Culinology® book.

Wrapped Up in Local Fare 

Located in the beautiful coastal town of Isabela, Productos Tere is a farm-to-shelf manufacturing plant producing the Puerto Rican tamals or pasteles made from Yuca (manioc), green banana and plantains, filled with pork or chicken all wrapped in a banana leaf. In addition, they manufacture the typical blood pudding sausage of Puerto Rican: morcilla. Spend the day learning about the production of traditional Puerto Rican dishes directly from the owner while on a tour of this tropical farm. Transportation and entry fees are included.
