"Recently I noticed more and more Peruvian restaurants in Southern California and even noticed two Peruvian restaurants in Louisville, KY last month. So, I got curious and decided to do some further research into the flavors, cuisine and produce of Peru. Over the last 10 months, I had the opportunity to visit Peru three times to explore its cuisine. From street food at the Mercado de Surquillo in the heart of Lima to one of the top restaurants “Astrid and Gaston” and numerous places in between, the food was simply amazing!"

In June 2016, the unique flavors and textures of wholesome, underutilized crops like farro, buckwheat and barley had a modern appeal. Today, ancient grains are modernizing the way we brew beer.
In June 2017, clean label expectations were just gaining momentum. The industry is continuing to find ways to approach consumer confidence with RCA webinars like Novel Approaches to Clean Label Solutions. We see that the expectation for "free from" foods has only increased today, as we learned in the 2019 RCA Conference session, Avoiding the Consumer Cold Shoulder in the "Free From" Food Era
Finally, fermentation was a hot topic in 2018, but it has an extensive, scientific story and a future to come, as we learned during the 2019 RCA Conference session, Fermentation: The Past, Present and Future.
