New England RCA: Tapped In - Maple Farming 101
Join New England IFT and Research Chefs Association, in conversation with Jacob Powsner, to learn the ins and outs of maple syrup production in Vermont. This session will cover soup to nuts what it takes to turn sap into syrup on a commercial scale as well as a peek into the history of sugaring. Event Agenda:

Speakers:
Jacob is a co-owner at Baird Farm, a fourth-generation diversified family farm, where he helps to manage the 15,000 tap maple production. He spends most days managing the work of the farm, agritourism, and value-added manufacturing of organic maple products.
Off the farm, Jacob is an active voice in the maple industry as well as agriculture at large. He currently sits on the board of the Vermont Maple Sugar Makers’ Association and is active in the policy work behind organic maple certification
